Superfoods can be considered as functional foods defined as “food that may provide a health benefit beyond the traditional nutrients it con-tains”. Many studies have shown positive effects of probiotic-prebiotic combination in humans. Synbiotics could be an affordable strategy for intestinal microbiota modulation.In this work, selected green superfoods such as wheat, green barley and matcha powders were characterized on total carbohydrates, reducing sugars, fructo-oligosaccharides and β-glucan contents. Furthermore, the influence of superfood ́s aqueous extracts on probiotic viability of three probiotic strains L. acidophilus, L. casei and B. breve were tested under normal cultivation conditions and model digestion conditions. Probiotic strains were cultivated under anaerobic condition in MRS broth medium at 37 °C for 24 hours. Viability of probiotics after incubation with aqueous extracts were determined by measuring OD at wavelength 630 nm and by flow cytometry using propidium iodide as fluorescent dye.Based on results, green barley and wheat with relatively high FOS and β-glucan content have a high potential to become a very good prebiotic source to enhance probiotic growth in human gut even after model digestion conditions.
