Original Abstract

Thaumatin is an alternative sweetener of plant origin. It is isolated from the tropical plant Thaumatococcus daniellii Benth.. Thaumatin is 3 000 - 5 000 times sweeter than sucrose. This sweet protein have two forms: - thaumatin I (22.2 kDa), - thaumatin II (22.3 kDa). Both of them contain 207 amino acids in the molecule. Beyond thaumatin I and thaumatin II contains the isolate from plant 3 minor molecules (thaumatin a, b, c) and another sweet proteins. Thaumatin is strong basic protein of pI = 11.7 - 12. This poster demonstrated the MECC separation applicability for the analysis of this sweet protein. The advantages of MECC method are its simplicity, cheapness and short analysing time.
