Original Abstract
Lactobacillus strains have been widely used in food industry for centuries and are considered to be GRAS (generaly recognized as safe) organisms. The antimicrobial substances produced by Lactobacillus strains have received most considerable attention in recent years. Inhibitory role may play antimicrobial compounds such as different organic acids, hydrogen peroxide, carbon dioxide or proteinaceous substances (e.g. bacteriocins). The aim of the work was screening of Lactobacillus strains isolated from breastfed full-term infant faeces for production of proteinaceous antimicrobial substances using agar-spot test and agar-diffusion test. All lactobacilli produced different antimicrobial substances such as acids, hydrogen peroxide or proteinaceous substances inhibiting the growth of indicator strains. The inhibition was strain-specific and was dependent on tested strain and also on indicator strain. Tested lactobacilli were the most effective against lactobacilli indicator strains. Lactobacillus gasseri RL2P, Lactobacillus gasseri RL22P and Lactobacillus gasseri RL2 were found the most effective against indicator strains by agar-spot test and also by agar-diffusion test and will be subjected to further examination.
