Original Abstract

Polygalacturonases (PGases) produced by the ascomycetous yeast-like organism Geotrichum candidum CCY 16-1-29 on the waste from winegrowing "grape pomace" were characterized. This strain was able to grow on the grape pomace and to produce PGases with high enzymatic activity.
