The growing human population is associated with a proportionally increasing amount of raw materials and food waste that mankind produces. These materials still have potential that can be used for biotechnological valorisation. This work focuses on the biotechnological processing of waste oils/fats and waste glycerol by carotenogenic yeasts, which are excellent producer of beta-glucans, ergosterol, ubiquinone, carotenoids, and other valuable compounds. Results show, that selected yeast strains were able to process waste selected oils and fats as well as glycerol in a circular economy model and, moreover, are resistant to potential antimicrobial compounds present in the medium. The best-growing strain Rhodotorula toruloides CCY 062-002-004 was selected for fed-batch cultivation in laboratory 5L bioreactor in a medium containing a mixture of coffee oil and waste glycerol. The results show that strain was able to produce more than 18 g of biomass per litre of media with high content of carotenoids 10.514±1.520 mg/g of CDW. The overall results prove that combining different waste substrates is a very promising option for food wastes valorization and production of enriched yeast biomass.
