Originální abstrakt

The aim of this study was to develop a procedure of automatic image processing of soft cheese samples by an image analyser, and detect parameters for the determination of size and shape of flat globules. Result of the study were processed statistically. The data obtained are used to evaluate the effect of different methods of heat treatment on size an shape of fat globules.
