We identified and verified of the genus yeasts Hansenispora, Pichia, Saccharomyces a Rhodotorula which participated in fermentation process during the production of the white wine from Moravia wine region of Velké Pavlovice. We found of differences between identification of type yeasts (CCY) by conventional methods and molecular techniques too. For species identification of yeasts, amplification products were digested with restriction enzymes HpaII, MseI, AluI, HaeIII, HinfI, TaqI and CfoI . The profiles of restriction analysis were analysis by BioNumerics programme and dendrogram based on clustering analysis of the Jaccars similarity coefficient was constructed.
