On the project
Odborné práce studentů DSP oboru Potravinářská chemie budou zaměřeny na rozvoj progresivních postupů výroby a zpracování potravin a na využití pokročilých instrumentálních a molekulárních technik k analýze obsahu, účinku a stability prospěšných látek, ale i kontaminantů a alergenů v surovinách a produktech. Rozvíjeny budou komplexní postupy pro stanovení autenticity potravin. Pozornost bude věnována aktuálnímu trendu cirkulární ekonomiky při zpracování, využití a zhodnocení odpadních surovin ze zemědělsko- potravinářského komplexu.
